Breakfast Wacky Seed Ball

for Beginners - Level 1

Makes 3.5 full size AirBake baking sheets

2 cups organic unhulled sesame seeds (light brown color)

2 cups organic raw sunflower seeds

1 cup organic chia seeds

3 organic bananas

1 tablespoon organic vanilla extract

¼ teaspoon sea salt

½ teaspoon organic cinnamon powder

1 tablespoon organic cacao powder

5 cups sprouted organic oats

¾ cup raw unfiltered honey
optional

1 cup organic cacao nibs

1 cup shredded unsweetened organic coconut (without preservatives)

Instructions

  1. Mix sesame seeds, sunflower seeds, sea salt, cacao, honey, cinnamon.
  2. In a separate bowl, take the chia seeds and 1¼ cup of filtered water and let it sit for 15 minutes. A gel should start to form. Mix well and let it sit about 10 minutes till the water gels into the chia seeds.
  3. Add the chia gel into sesame and sunflower seeds mixture.
  4. Blend bananas with the vanilla extract in a blender. Add the vanilla flavored banana puree into the seeds bowl and mix.
  5. Add 5 cups of oats
  6. Optional (highly recommended!) add cacao nibs and shredded coconut

Line AirBake pans with unbleached parchment paper. Press down to a very thin layer because it tastes better and crunchier nice and thin. Bake 275 F for one hour or add an additional ten minutes to make it crispier.

Or, shape into 1.5 inch sphere balls. They can be pushed near each other on the baking sheet, since they don’t rise in the oven.

Optional for best results- After baking time, turn off the oven and let it sit inside the turned off oven for another hour to harden. Then it can be cracked into pieces and stored in the freezer. It tastes best right out of the freezer.

Advanced - Level 2

Makes 6-8 full size Airbake baking sheets

2 cups organic unhulled sesame seeds (light brown color)

2 cups organic black sesame seeds

2 cups organic raw sunflower seeds

2 cups organic hemp hearts

2 cups organic chia seeds

4 organic bananas

1½ tablespoon organic vanilla extract

½ teaspoon sea salt

1½ teaspoon organic cinnamon powder

⅛ teaspoon organic nutmeg

½ teaspoon organic ground clove

2 tablespoons organic cacao powder

14 cups sprouted organic oats

1½ cups raw unfiltered honey

1½ cups organic flaxseeds

1½ cups organic milk thistle seeds

3½ cup organic cacao nibs

3 cups shredded unsweetened organic coconut (without preservatives)

Optional 1 tablespoon dulse powder for mega nutrients (the many flavors in the recipe help hide the dulse taste)

Equipment

small coffee grinder (Krups brand, $20.)

lettuce spinner (OXO, from Target)

AirBake baking sheets (from Target)

Unbleached parchment paper (Brand ‘If You Care’ at Target/Amazon)

Optional – stainless containers for freezer storage 26cm or 20 cm from Packagefree.com

For best results, mix by hand.

  1. Add the sesame seeds, sunflower, and hemp in one covered bowl. Soak for 4 hours in 8 cups filtered water. Strain the water with a strainer and you can use a salad spinner after to remove the excess water. (Only a few seeds will get lost and fall through the basket since it’s wet.)
  2. In a separate bowl, take the chia seeds and 1¼ cup of filtered water and let it sit for 15 minutes. A gel should start to form. Mix well and let it sit about 10 minutes till the water gels into the chia seeds. Add the chia gel into sesame, sunflower, and hemp seeds mixture. Mix well.
  3. Add sea salt, cacao powder, clove powder, dulse, nutmeg, cinnamon and honey into the mixture and mix well.
  4. Blend the bananas with the vanilla extract in a blender. Add the vanilla flavored banana puree into the seeds bowl and mix.
  5. Measure out the whole flaxseeds and milk thistle seeds. Using a coffee grinder, grind and place crushed into the seeds bowl. Mix well.
  6. Add cacao nibs, shredded coconut and oats. Mix.

Line AirBake pans with unbleached parchment paper. Press down to a very thin layer because it tastes better and crunchier nice and thin. Bake 275 F for one hour or add an additional ten minutes to make it crispier.
