Date Chewy Balls

Organic medjool dates
Organic sunflower seeds
Organic raisins (with no added oils)
Any mix of organic raw nuts (almonds, cashews, walnuts, macadamia, pecans, hazelnuts)
Organic cacao powder
The recipe ratio is 4 part dates to 1 part each of sunflower, raisons, cacao, crushed mix nuts. The size depends on how much you want to make. The dates is 4x the amount of each of the other ingredients. Recipe example: 8 C dates, 2 C sunflower seeds, 2 C mixed nuts, 2 C raisins, 2 C cacao.
Pit, check for bugs and then mash dates on an S blade in the food processor. Place in bowl. Mash raisins on an S blade in the food processor. Place in bowl. Pulse chop into small pieces sunflower seeds. Then finely chop nuts. Add it to the bowl. Add cacao powder to the bowl. Mix all ingredients. For best taste, dehydrate for 12-18 hours on 150-160 F and then store in freezer. The balls can be frozen without dehydrating, but it won’t get a chewy texture and also must be eaten straight from freezer. When dehydrating before freezing, the balls can be taken out of freezer and will still taste good hours later.
Note
It has big benefits of making them more digestible and activating nutrients to soak seeds in filtered water for 4 hours and nuts for 8 hours and then dehydrate on 112 degrees. I do this in advance and freeze so when I’m ready to make the balls, the seeds and nuts are ready to use.
