Date Nut Log

2 lb organic dates

2.5 cups organic pumpkin seeds

2 cups organic almonds

1 c organic pecans or organic Brazil nuts

2 T organic vanilla extract

1.5 T organic cacao

⅛ teaspoon sea salt

Equipment

food processor with S blade

Add dates and vanilla extract to the food processor and puree on S blade. It may take a few tries of turning off the machines, unclumping the dates and pulsing again for the sticky dates to get into a smooth puree. If you wet the dates with water and then drain, it will make them easier to puree. Place the pureed dates in a work bowl. Add each type of nut/seed separately to the food processor and pulse to chop into small pieces (not powder). Take each nut/seed out before adding the new nut/seed. Since the nuts/seeds are different levels of hardness, they should not be chopped together. Mix by hand the pureed dates and chopped nuts and seeds.

Option1, Roll into 4 logs that are each 7 inch long, 1.5 inch diameter. Roll the outside of the log in shredded unsweetened coconut or almonds chopped very finely. Wrap in unbleached parchment paper and freeze in a ziplock bag. Enjoy and slice straight from the freezer.

Option 2, shape into 1 inch balls and freeze. Enjoy frozen.
